My big fat weekend

This weekend I went a little fat crazy. I ran out of lard and ghee at roughly the same time. I was fat-less. What was a young caveman to do? Well the ‘normal’ and ‘socially acceptable’ thing would be to go to the store and buy some cooking oils. But I instead decided to turn my kitchen into a fatty-smelling wonderland and render some pig fat as well as clarify some butter into ghee.

The Lard

Pastured Pig Lard. If you want to make REAL fried chicken, you make it with Pig Lard. There is no substitute.

The Ghee

Oh Ghee, my go to fatty friend. Gives everything a rich nutty aroma and tastes awesome. I use it as my staple go-to oil and i really go through jars of it.

I love making my own lard! The crunchy leftover bits are great with salt and pepper, and a beer(counts as a fermented food doesn’t it?).

I never thought of making my own ghee before. Thanks for the idea. How exactly do you go about it?

Super easy Bushrat.

Get some good quality unsalted butter. Throw it in a pan, and heat it at a medium heat. Keep going for about half an hour until all the scum has sunk to the bottom and you have a dark liquid (there will also be a huge waft of this nut smell once its ready, its divine!). Take it off the heat, strain it through a cheese cloth, and chuck it in the fridge!
