I love eggs. They are what I consider a paleo superfood. I go for omega3 enhanced free range eggs when I can, and boy do I love them. What’s not to love? They are full of protein, and nutritious fat. They taste great. And I don’t care what you say, they go well with anything.
An old favourite. I made this other the weekend as I had more time for breakfast. We got 3 poached eggs, 3 scrambled eggs (don’t ask why, I just like making a bit of both) some tasty organic bacon and an organic chicken sausage.
Next a quick dinner I made. This was after a 24 hour fast and an intense gym session. I scrambled up 5 eggs in butter, then put some bacon in a pan and fried it up. Not wanting to waste the bacon oil, I got whatever vegetables I could find (mushrooms, capsicum, onion and some garlic) and fried it all up.
Then there is always the add egg to anything else formula. I.e Steak with asparagus, spinach and potato + Egg concoction.
So as you can see I am a big proponent of eggs.

Here is how I make scrambled eggs in the microwave:
1. Melt teaspoon of butter in dish
2. Break 3 eggs into dish
3. Whip eggs with fork
4. Add 1 tablespoon of coconut milk or milk
5. Whip eggs with fork
6. Microwave eggs for 45 seconds
7. Use your fork and stir them gently, so that the uncooked blends in with the still loose egg. Set the eggs back in the microwave.
8. Microwave eggs for 45 seconds then stir eggs
9. Microwave eggs for 15 seconds then stir eggs
10. Repeat microwaving and stirring until done.
The advantage of microwave eggs are:
1. quick
2. eat the eggs in the dish they were cooked in
3. the eggs are light and fluffy.
4. It is difficult to ruin the eggs
Jake that sounds awesome. I have never tried making eggs in a microwave. I will definitely do it when I am back home!
I’m pretty obsessed with eggs myself! They’re a daily staple for me. I love eggs on salad and in sandwiches…delish!
